Fresh Cranberry Sauce

Serves 12
Ingredients
- Yields 1 1/2 cups
- 1 bag of fresh organic cranberries (8 oz or 227g)
- 3/4 cup water
- 1/2 cup coconut sugar or brown sugar*
- Zest from one orange
Instructions
- In a medium saucepan, bring water and sugar to a boil. Add cranberries and orange zest. Bring to a boil until berries burst.
- Reduce heat and simmer for 10 minutes.
- For a chunkier sauce, mash with a fork; for a smoother sauce you can transfer to a blender and blend until smooth.
- Transfer to a bowl and garnish with more orange zest.
- Keep refrigerated. Sauce will thicken as it cools.
- This can also be made a few days before.
