Fresh Cranberry Sauce

  1. Yields 1 1/2 cups
  2. 1 bag of fresh organic cranberries (8 oz or 227g)
  3. 3/4 cup water
  4. 1/2 cup coconut sugar or brown sugar*
  5. Zest from one orange
  1. In a medium saucepan, bring water and sugar to a boil. Add cranberries and orange zest. Bring to a boil until berries burst.
  2. Reduce heat and simmer for 10 minutes.
  3. For a chunkier sauce, mash with a fork; for a smoother sauce you can transfer to a blender and blend until smooth.
  4. Transfer to a bowl and garnish with more orange zest.
  5. Keep refrigerated. Sauce will thicken as it cools.
  6. This can also be made a few days before.
