This Quinoa Greek Salad is perfect for a backyard cookout or any day of the week. Save time and make it the day before!
Summer is in full force here in the Interior BC which means lots of backyard BBQs. This is basically my favourite time of year where you go from soups and stews to fresh salads and garden veggies.
Greek salad is one of my favourite types of salad, despite the fact that neither my H nor I like tomatoes we’ll both eat it in Greek salad – go figure. And don’t even get me started on Kalamata olives! I could eat a jar of those salty nuggets straight up.
I know it’s not in traditional Greek salad, but adding quinoa gives it a nice texture and beefs it up a little without being too heavy.
So next time you’re looking for an easy, make-ahead dish that is perfect for a cookout or any day of the week, whip up this Quinoa Greek Salad.


- 1 cup quinoa
- 2 cups water
- 1 English cucumber, seeded and chopped (about 250g)
- 1 container grape tomatoes, quartered (284g)
- 1/2 red onion, sliced (100g)
- 1/3 cup Kalamata olives, pitted and halved (100g)
- 6 oz feta cheese, crumbled
- 1/2 cup olive or avocado oil
- 2 Tbsp red wine vinegar
- 2 Tbsp fresh lemon juice
- 2 tsp oregano
- 3 cloves garlic, minced

- First, prepare the quinoa.
- Rinse quinoa thoroughly, add to a medium pot with 2 cups water.
- Cover and bring to a boil.
- Reduce heat and simmer on low for 15 minutes.
- Once all of the water is absorbed, turn heat off, set pot aside and allow to fully cool.
- For the dressing, add all of the ingredients to a mason jar and shake vigorously.
- In a large salad bowl, add cucumber, tomato, onion, olives and feta. Stir in cooled quinoa.
- Add dressing and mix well.
- Keep refrigerated.
- This salad can be made the day before, in fact it tastes better!
