Apple Spice Protein Muffins

These delicious apple spice protein muffins have 7g of protein each, thanks to Nuzest protein powder, which make them the perfect pre-workout snack or a quick and easy breakfast to grab and go.  They are also low-carb, low-sugar and gluten-free.


It may be spring but for some reason I have been on a real apple kick lately.  Most people who follow a low-carb/keto diet avoid high-carb fruit, but these muffins only have one apple in the entire recipe so they only have 2g net carbs and 2g of sugar per muffin – not too shabby!

I love cinnamon – like a lot!  I’m all about the flavour so I’m pretty heavy-handed on the spices. If you think one tablespoon is too much feel free to scale it back a bit, but it really adds some awesome flavour.  It’s ok to live a little!

I sweetened these muffins with xylitol but you cold also use honey or maple syrup (this would of course change the nutritional info below). I also added Nuzest Vanilla Clean Lean Protein so each muffin has 7g of protein which makes them a filling mid-day snack.Apple Spice Protein Muffins Pinterest

Ingredients
  1. 1 1/2 cups almond flour
  2. 1/2 cup Nuzest Vanilla Clean Lean Protein
  3. 1 Tbsp cinnamon
  4. 1/2 tsp nutmeg
  5. 1/4 tsp salt
  6. 1/2 tsp baking soda
  7. 1 medium apple, about 150g (I used gala)
  8. 2 eggs
  9. 1/3 cup melted butter or coconut oil
  10. 1/4 cup unsweetened almond milk
  11. 2 tsp vanilla extract
  12. 1/4 cup xylitol or sweetener of choice
Instructions
  1. Preheat oven to 350F.
  2. Line a muffin tin with paper or silicone liners.
  3. In a large mixing bowl, combine the dry ingredients (first 6 ingredients).
  4. Dice apple into small cubes.
  5. In another mixing bowl, combine eggs, butter, almond milk, vanilla and xylitol. Mix well with a hand mixer.
  6. Add wet ingredients to dry ingredients. Stir in diced apple.
  7. Scoop batter into muffin tin.
  8. Bake for 18 minutes.
  9. Remove from oven and allow to cool.
