Keto Mint Chocolate Fudge

I’ve been seeing so many minty green posts recently in honour of St. Patrick’s Day, its inspired me to make this healthy keto mint chocolate fudge!

St. Patrick’s Day is coming up and my social media feed has turned into a mint green frenzy.  The craving for mint + chocolate was real. I needed to fix that ASAP. 

This fudge could not be easier to make.  Simply melt the ingredients, pour into a pan, then blend the icing ingredients and drizzle on top. Easy peazy and oh so festive for St. Patrick’s Day.

Keto Mint Chocolate Fudge

For the Fudge
  1. 1/2 cup coconut butter
  2. 1/2 cup coconut oil
  3. 1/2 cup full fat coconut milk
  4. 1/4 cup non-GMO xylitol (you could add more if you like it sweeter)
  5. 6 oz stevia chocolate chips
  6. 1/8 tsp mint extract
  7. Pinch of sea salt
For the "Icing"
  1. 1/4 cup full fat coconut milk
  2. 2 Tbsp coconut butter
  3. 1 Tbsp coconut oil
  4. 1/4 avocado (about 30g)
  5. Few drops mint extract
  6. Few drops liquid stevia
  7. Few leaves of fresh spinach for colour
  1. Line an 8 x 8 inch baking dish with parchment paper.
  2. Combine coconut butter, coconut oil, coconut milk, xylitol, chocolate chips, mint extract and salt in a bain-marie or double boiler.
  3. Melt over low heat, stirring occasionally.
  4. Once it is melted and smooth, remove from heat and pour into baking dish.
  5. Refrigerate for 2-3 hours or overnight until firm.
  6. For the icing, melt coconut oil and coconut butter. Add to a blender with remaining ingredients and blend until smooth.
  7. Drizzle over fudge and refrigerate until firm.
  8. Remove and cut into squares.
  9. Keep leftovers refrigerated.
