Cabbage Roll Soup

If you love cabbage rolls but don’t like the hassle of making them, this Cabbage Roll Soup is so easy to whip up and hits all the right spots.


We are half way into February which means many of those New Year’s Resolutions have been tossed out the window.  But don’t fret, there’s still plenty of time to get back on track! 

Honestly, I’m not big on resolutions (probably because I never stick to them), but I do try to stick to a clean diet and consistent workouts.  Sometimes I’m on the ball, sometimes I’m not, but I try not to stress about it. 

Half the battle is having healthy foods on hand and prep, prep, prep.  Luckily, soup is one of those meals that is so easy to whip up, hello one-pot meal!  It also freezes well, so prep on.

I’ve always loved cabbage rolls, and so does the H, but sometimes I don’t want to go through the hassle of making them, it’s a lot of work! I’m all about quick, easy and healthy.  The Instant Pot makes this recipe super simple to make, but if you don’t have one, it’s just as easy to make on the stove.  I’ve included both versions below.

Ingredients
  1. 1/2 lb ground beef
  2. 1/2 lb ground pork
  3. 1 medium onion, diced
  4. 2-3 cloves garlic, minced
  5. 3 cups chicken stock
  6. 1 14oz can diced tomatoes
  7. 1 can tomato paste
  8. 1 small/medium head of cabbage
  9. 1 Tbsp Worcestershire sauce
  10. S&P to taste
In the Instant Pot
  1. Turn Instant Pot on and set to saute setting.
  2. Add ground beef, pork, onions and garlic.
  3. Cook until meat is no longer pink.
  4. Strain excess fat.
  5. Return meat to Instant Pot and add remaining ingredients.
  6. Lock the lid on and change setting to Soup Cycle.
  7. Once it has beeped, switch the valve to quick release.
  8. Remove lid and serve.
On the Stove-top
  1. Add ground beef, pork, onions and garlic to a large pot and cook until meat is browned.
  2. Strain any excess fat and return to pot.
  3. Add remaining ingredients and cook covered on medium/low for 1-1 1/2 hours until cabbage is tender.
Notes
  1. To keep this recipe low-carb I did not add rice, but if you aren't following a low-carb diet, it would be a great addition to this soup.
