Low-Carb Chocolate Lava Cake

Your valentine will love you ten times over with this decadent Low-Carb Chocolate Lava Cake.  Rich, smooth and chocolately but still low in sugar and gluten-free, you’ll feel like you’re indulging!

Valentine’s Day is right around the corner and have I got a dessert for you!  Whether you’re spending it with your sweetheart or rocking it solo, you will fall in love with this decadent dessert.

I’m pretty sure lava cake is the sexiest dessert.  Yes, chocolate can be sexy and this lava cake checks all the boxes.

Smooth. Check.

Silky. Check.

Satisfying. Check.

Leaves you wanting more. Check.

What’s even better is it’s low-carb, low-sugar and gluten-free.  So even though you’ll feel like you’re having the most amazing dessert, you won’t be adding all of those extra calories and sugar.  Do you love me yet?

Chocolate Lava Cake

  1. 2 squares (20g) dark chocolate (80% or more)
  2. 1 Tbsp coconut oil
  3. 2 eggs
  4. 2 Tbsp full-fat coconut milk
  5. 1/2 tsp pure vanilla extract
  6. 1-2 Tbsp sugar of choice (I used xylitol)
  7. 2 Tbsp cocoa powder
  8. 1 Tbsp almond flour
  9. Pinch of salt
  1. Preheat oven to 400F.
  2. Spray two 8 ounce ramekins with non-stick spray or grease with coconut oil. Place on a baking sheet.
  3. Melt chocolate and coconut oil.
  4. In a medium bowl, beat eggs, coconut milk, vanilla and sugar.
  5. In a small bowl, sift together cocoa powder, almond flour and salt. Make sure there are no lumps!
  6. Add the dry ingredients to the wet ingredients and stir until combined.
  7. Stir in melted chocolate and coconut oil.
  8. Divide evenly among the two ramekins.
  9. Bake for 12-14 minutes. You want the edges to lift away from the side but the centre jiggly. *Cooking time may vary as each oven is different. Check it around 11 minutes.*
  10. Allow to cool and flip upside down onto a dessert plate.
  11. Dust with cocoa powder.
  12. Enjoy!
