Lemon Coconut Protein Balls ~ Vegan, GF

Add these lemon coconut protein balls to your snack prep list this week.  They’re vegan, gluten-free and low-sugar which make them the perfect pre-workout snack.

It’s a new year and that means a long list of new year’s resolutions that I’ll throw out the window by January 29th.

But seriously, I never bother making new year’s resolutions. Why?  Because I try to be awesome year round!

OK “try” is the key word there πŸ˜€

I also “try” to eat as healthy as I can throughout the year.  I like to have some kind of protein snack on hand to keep from reaching for all of the excess Christmas chocolate that I “hid” in the freezer. (Right, it doesn’t count when I know where they are hidden.)

Moving on…

Nuzest makes it super easy to stay healthy with their delicious protein powders!  They recently came out with three new functional protein flavours.  One of my favourite flavours is Coffee, Coconut with MCTs

We all know coffee gives us energy and enhances physical performance.  MCTs (Medium Chain Triglycerides) aid in weight loss, improve cognitive function and can increase energy.  These protein balls are packed full of goodness!  They are also vegan, gluten-free, low in carbs and sugar but full of protein and healthy fats to keep you full for hours.

Lemon Coconut Proetin Balls

Lemon Coconut Protein Balls

Write a review
  1. 1/2 cup Nuzest Coffee Coconut MCT Clean Lean Protein
  2. 1/4 cup coconut butter, softened
  3. 2 Tbsp coconut oil, melted
  4. 2 Tbsp fresh lemon juice
  5. 1 Tbsp maple syrup (or honey if not vegan)
  6. 2 Tbsp almond milk
  7. 2 Tbsp coconut flour
  8. 1/4 cup unsweetened shredded coconut
  9. 1/8 tsp salt
  10. Few drops of liquid stevia if needed for extra sweetness
  1. In a large bowl, mix protein powder, coconut flour and salt until there are no lumps.
  2. Add coconut butter, coconut oil, lemon juice, honey and start with 2 Tbsp of almond milk.
  3. Mix well.
  4. If the mixture is too dry add a bit more almond milk as needed.
  5. Roll the mixture into 12 balls and then roll in unsweetened shredded coconut.
  6. Refrigerate until firm.
