Vegan Spinach & Artichoke Zucchini Boats

Now that Christmas is over, it’s time to get back on track.  The amount of chocolate and other goodies I’ve consumed these past few weeks were a little much…but oh so worth it!

I never want to deprive myself over the holidays, but once the new year hits I feel like it’s a fresh start and the opportunity to get back into the routine of clean eating and more consistent workouts.

These Spinach & Artichoke Stuffed Zucchini Boats are a super delicious side dish that you can enjoy all week long.  The filling is a combination of cashews, nutritional yeast, spinach and artichokes, so they are 100% vegan too.

I always find it hard to cook zucchini different ways and usually end up spiralizing it.  This recipe is a really nice change from that and will be sure to please any zucchini lover!

Spinach & Artichoke Zucchini Boats

Vegan Spinach & Artichoke Zucchini Boats

Ingredients
  1. 3 medium zucchinis (about 625g)
  2. 5 oz raw cashews, soaked for a few hours
  3. 1 cup artichokes (150 g)
  4. 4 oz cooked spinach (115 g)
  5. 3 Tbsp nutritional yeast
  6. 1 Tbsp fresh lemon juice
  7. 1 tsp arrowroot starch mixed with 2 tsp of water
  8. ½ cup water
  9. 2 cloves garlic, minced
  10. S&P
Instructions
  1. Preheat oven to 350F.
  2. Cut zucchinis in half-length wise and scoop out seeds.
  3. Drain and rinse cashews. Add to a blender with nutritional yeast, lemon juice, garlic and salt and pepper.
  4. Blend until smooth. Add water as needed.
  5. Add arrowroot mixture, blend again. Transfer to a bowl.
  6. Stir in spinach and artichokes.
  7. Scoop mixture into zucchinis.
  8. Bake for 35-40 minutes.
  9. Remove from oven.
  10. Enjoy!
