Vegan Baileys Irish Cream

Fill your glass with some holiday cheer with this deliciously creamy Vegan Baileys.  It has 1/3 fewer calories than traditional Baileys and can also be made sugar-free and low-carb.  Cheers to the holidays!


OK guys, this is one of those recipes where I asked myself “Why the heck haven’t I made this sooner?!”

It’s creamy, vegan, low-carb, low-sugar, with no additives or junk and it’s OH. SO. DELISH!

Bailey’s Irish Cream is a holiday must have in my house but it racks up a whopping 327 calories and 20g of sugar per 3-ounce serving.
 
Yikes!
 
It also contains a number of additional ingredients including an emulsifier to keep the alcohol mixed together with the cream. No thanks.
 
Yes, this homemade version does separate a bit, but all you have to do is shake it up before serving.  And it’s SO much healthier with only about 200 calories for 3 ounces and 2 grams of sugar if you use a low-carb sweetener such as xylitol or Swerve.
 
It’s also completely dairy-free but you would never know it.  It’s still thick and creamy with all the original Baileys taste and texture.
 
So let’s bust out the fancy glasses and cheers to the holidays!

Ingredients
  1. Yields 2 cups
  2. 1 can full fat coconut milk
  3. 1/4 cup sugar of choice*
  4. 1/3 cup strong brewed coffee
  5. 1/2 cup Jameson Irish Whiskey
  6. Pinch of salt
Instructions
  1. Add coconut milk and sugar to a medium sauce pan and bring to a boil.
  2. Reduce heat and simmer for 8-10 minutes stirring frequently.
  3. Remove from heat and stir in coffee, whiskey and salt.
  4. Allow to cool then add to a large mason jar or swing-top bottle.
  5. Keep refrigerated.
Notes
  1. * I used xylitol in this recipe, but coconut sugar would work if you're not following a low-carb diet
  2. Try different flavour combinations by adding vanilla, almond, mint or chocolate!

    OMG yes!! I need this. I’ve been drinking a lot of regular Baileys recently, but man I need to make this since it’s so much better for you!
