Fresh Cranberry Sauce in the Instant Pot

Fresh cranberry sauce is so much more flavourful than the canned stuff and you can really make it your own by playing around with different flavours.  To make life easier, it’s ready in under 10 minutes when you cook it in the Instant Pot.

It’s hard to believe Christmas is less than two weeks away!  It always seems to creep up on you and before you know it, you’re planning Christmas dinner. I like to stay ahead of the game and make as many things ahead of time that I can. 
 
Cranberry sauce is a must have at Christmas dinner and it’s so easy to make, there is no need for that weird canned stuff anymore.
 
If you want to make it low-carb you can use xylitol, stevia or Swerve for the sweetener. For paleo, I would use coconut sugar or maple syrup.  It’s also fun to try different flavour combinations.  I love adding fresh orange zest and cinnamon, it smells just like Christmas!
 
I’ve made cranberry sauce for years on the stove, but recently discovered an even easier way to make it – in the Instant Pot.  It takes less than 10 minutes start to finish.
 
Make it ahead of time and freeze it until Christmas.  One less thing to do on Christmas Day!

Ingredients
  1. ​12 oz fresh cranberries
  2. Orange juice + zest from 1 large orange
  3. 1/4 to 1/2 cup sweetener of choice ​
  4. Pinch of cinnamon
  5. Pinch of salt
Instructions
  1. Wash and pick through cranberries. Discard any discoloured or damaged ones.
  2. Add cranberries, orange juice and orange zest to the Instant Pot.
  3. Set manual setting for 1 minute.
  4. Once time is up, allow to naturally release for 7 minutes then switch value to quick release.
  5. Remove lid and stir in sugar, cinnamon and salt.
  6. Change setting to saute.
  7. Mix well making sure to scrape the bottom so it does not burn.
  8. Add water to achieve desired thickness.
  9. Transfer to a bowl.
Notes
  1. You can serve this warm or cold.
  2. For a rustic, chunky version, serve as is.
  3. You can also blend and strain for a smooth sauce.
  4. I make this ahead of time and freeze until the holidays.
