Low-Carb Shortbread Cookies

Let’s keep this Christmas baking train rolling with these low-carb shortbread cookies. They are low in sugar so feel free to indulge a little bit this holiday.

Once the Christmas baking starts it’s hard to slow me down.  I love making the tried true favourites but I also like trying out new recipes.

Shortbread is definitely a Christmas favourite for many, but some people have dietary restrictions such as gluten and sugar. 

But have no fear! You can still enjoy the holiday favourites after just making a few substitutions.

Since these cookies are made with almond flour instead of regular flour they do have a little bit different texture than traditional shortbread but all that buttery flavour is still there.

To take it to the next level, I dipped them in dark chocolate and added sprinkles and crushed candy canes.  If these don’t scream Christmas, I don’t know what will!

Low-Carb Shortbread Cookies

  1. 2 ½ cups fine almond flour
  2. 2 Tbsp coconut four
  3. 6 Tbsp butter, softened
  4. ½ cup powdered Swerve or xylitol
  5. 1 tsp pure vanilla extract
  6. 150 g dark chocolate (I used 85%)
  7. Sprinkles or candy cane pieces (optional)
  1. Preheat oven to 325F.
  2. Line two large baking sheets with parchment paper.
  3. Beat butter and sugar until light and fluffy.
  4. Add vanilla.
  5. Slowly add in almond flour and coconut flour.
  6. Wrap dough in saran wrap and refrigerate for a few hours.
  7. Separate dough into 2 pieces.
  8. Roll out between two pieces of parchment paper.
  9. Cut out cookies and place on baking sheet.
  10. Bake for 10 to 12 minutes checking after about 8 minutes. Take cookies out just as edges start to brown. Times may vary depending on your oven.
  11. Remove cookies and allow to fully cool.
  12. Melt chocolate and coconut oil.
  13. Dip cookies in chocolate and add sprinkles and/or candy cane pieces.
  14. Place in fridge to fully harden.
