Instant Pot Fall Apart Pot Roast

Tender, fall apart pot roast in the Instant Pot will be a hit at your next dinner. Everyone will think you slaved all day but it only takes an hour and a half start to finish!

I have never been much of a beef eater.  I always found it had a strong flavour and tasted too “meaty” if that makes sense?

But after trying the hubbs’ pot roast at a restaurant recently, I was converted!  It was so tender and juicy and literally melted in my mouth.  I thought if beef always tasted that good I’d actually eat it more often.

Since I try to be a good wifey, I figured I could try cooking this for the hubbs. Full confession, this was the first time I cooked pot roast. I read that it takes anywhere from 40 to 70 minutes…that’s a huge difference!

I always err on the lower side because you can always put it in for longer.

I also cut the roast in half so that I had two chunks about 2 inches thick.  The IP does not take weight into consideration as much as thickness of the meat.Instant Pot Fall Apart Pot RoastSo, in the pot it went, I set the manual timer for 40 minutes and crossed my fingers hoping I just didn’t throw $10-15 down the drain.

Instant Pot Fall Apart Pot Roast

  1. 2 lb chuck roast, cut to 2” thickness
  2. 1 ½ cup beef broth
  3. ½ cup red wine
  4. 1 medium onion, diced
  5. 4 cloves garlic, minced
  6. 2 Tbsp olive oil
  7. S&P
  1. Set IP to sauté setting.
  2. Add olive oil, onion and garlic to the pot. Sauté for a few minutes.
  3. Sprinkle salt and pepper on chuck roast.
  4. Add to IP and brown roast on all sides.
  5. Add beef broth and wine.
  6. Lock the lid on the IP. Change the setting to manual and set the time for 40 minutes.
  7. Once time is up, allow IP to naturally release for 20 minutes.
  8. Open lid and remove roast from IP. Transfer to a plate and cover with foil to let it rest for about 10 minutes.
  9. Meanwhile, strain the liquid in the pot to use for a jus or thicken with arrowroot or corn starch for a gravy.
  10. Shred meat and serve with your favourite roasted vegetables.
  11. Enjoy!
