Low-Carb Breakfast Sandwich

I used to think so until I started listening to my body.

Once I started eating high fat I no longer felt the need to eat first thing in the morning.  I eat when I’m when hungry. 

And guess what? That’s OK! 

Sometimes it’s at 9am, sometimes it’s at 11am. 

Instead of listening to what “they” told me I should be doing I started listening to my body and giving it food when it wants it.

Simple.

Most mornings I go for a bulletproof coffee or tea but on the weekends it’s bacon and eggs.  This breakfast sandwich is one of my favourite ways to get my healthy fats in while keeping things low-carb.Low-Carb Breakfast SandwichI love this low-carb english muffin.  It’s so easy to make and the perfect size for a breakfast sandwich.  Add a fried egg, crispy bacon and avocado and you’re set for the day!

Low-Carb Breakfast Sandwich
Serves 1

For the Low-Carb English Muffin
  1. 2 Tbsp almond flour
  2. 1 Tbsp coconut flour
  3. 1/4 tsp baking powder
  4. Pinch of salt
  5. 1 egg
Top With
  1. 1 fried egg
  2. 1-2 pieces of cooked bacon
  3. 1/4 avocado, sliced
Instructions
  1. Mix together all of the ingredients for the low-carb english muffin.
  2. Grease a large ramekin.
  3. Pour batter into ramekin.
  4. Microwave on high for 1 1/2 minutes.
  5. Remove and allow to cool.
  6. Cut in half and toast for added crispiness.
  7. Top with fried egg, bacon and avocado.
  8. Enjoy!

    I eat when im hungry as well and that is usually not first thing in the morning! This sandwich looks amazing

    Definitely going to try out that english muffin! I’ve been considering trying out the high fat approach recently. How have you liked it?

      That’s awesome! I really love it. I’m not as hungry, feel less bloated, helps regulate hormones and weight loss is a bonus 🙂
