Cauliflower Bacon Soup ~ DF, GF, Low-Carb

The cooler weather has officially arrived which means hunkering down next to the fire with a blanket and a warm bowl of soup.  This Cauliflower Bacon Soup is the perfect fix for a cool fall day.

I left out the potatoes and heavy cream which is normally a staple in most cauliflower soup recipes.  I wanted to keep it relatively low-carb and dairy-free, which also makes this recipe paleo.

The bacon is a MUST in this recipe.  Without that smokey flavour and healthy fats, you’ll have a pretty boring soup.

Cauliflower Bacon Soup - Gluten-Free Dairy-Free Low-Carb

Ingredients
  1. 1 medium head of cauliflower, cut into florets (about 800g)
  2. 1 small turnip, peeled and diced (about 200g)
  3. 1 leek, trimmed and sliced (about 175g)
  4. ½ white onion, diced (about 115g)
  5. 6 strips all natural bacon, cooked and chopped
  6. 2 cups chicken broth
  7. 2-3 cloves garlic, minced
  8. S&P to taste
  9. Chopped green onion for garnish (optional)
Instructions
  1. In a large frying pan, fully cook bacon until crisp. Remove bacon from pan and allow to cool.
  2. Rough chop bacon and set aside.
  3. In the same frying pan you cooked the bacon in (leave bacon grease in), cook leeks, onions and garlic until translucent, about 5-10 minutes.
  4. Remove from heat and set aside.
  5. Meanwhile, steam cauliflower and turnip for about 20 minutes. *cut turnip into small cubes so it will cook faster.
  6. In batches, blend cooked cauliflower & turnip with leek & onion mixture and chicken stock. I did this in two batches in my Vitamix.
  7. Return blended soup to large pot and bring to a simmer.
  8. Stir in ¾ chopped bacon and season with S&P.
  9. Dish into soup bowls, top with green onion and remaining bacon.
  10. Enjoy!
