Shredded Brussel Sprouts with Bacon, Pecans & Cranberries

These salty and sweet shredded brussel sprouts are the perfect side dish for your Thanksgiving dinner!


Canadian Thanksgiving is just days away.  I’m super excited to have my in-laws here this year. I’m used to cooking Thanksgiving dinner for just the H and I or a handful of friends, so it will be nice to have family around to share the holiday with. 

One of my favourite Thanksgiving side dishes is brussel sprouts.  The H disagrees, he’s totally happy with his peas and carrots.

I shredded the brussel sprouts with my Veggie Bullet (seriously, the best shredder and spiralizer out there!) but you can also use a mandolin, a grater or slice them thin by hand.  Not only do they cook faster this way, but I think the texture is much better too.

The bacon is everything in this dish!  It gives it that smokey flavour and fabulous fats along with the pecans.  The cranberries add that festive colour with a touch of sweetness. If you want to keep things low-carb, look for cranberries with no sugar added.  You can also make them yourself in your oven.Shredded Brussel Sprouts with Bacon, Pecans and Cranberries - Low-Carb Low-Sugar

Shredded Brussel Sprouts with Bacon, Pecans & Cranberries

Ingredients
  1. 3-4 cups brussel sprouts (about 300g)
  2. 2 slices all natural bacon
  3. 1 oz chopped pecans
  4. ΒΌ cup dried cranberries (about 30g)
Instructions
  1. Wash and trim brussel sprouts.
  2. Using a Veggie Bullet or mandolin, shred the brussel sprouts.
  3. Meanwhile, cook bacon in a large frying pan.
  4. Remove bacon and set aside, reserve bacon grease.
  5. Add shredded brussel sprouts to the same frying pan with a bit of water and cook until soft, about 8-10 minutes.
  6. Chop bacon and add back to the frying pan along with the pecans and cranberries. Cook for another 3 minutes.
  7. Serve immediately.
  8. Enjoy!
