Almond Butter Protein Cups

To give you that protein boost I used a mixture of collagen and protein powder.  Collagen is the most abundant protein in our bodies. It is found in our muscles, bones, skin, blood vessels and tendons.  Think of it as the glue that holds our body together.

As we age, collagen begins to deplete.  Other factors such as smoking, excess amounts of sugar and over exposure to the sun can also contribute to collagen depletion.

But don’t fret! You can start adding more collagen rich foods to your diet today.  Collagen is most abundantly found in bone broth (a fancy term for soup stock!) which is very easy to make using chicken, beef or fish bones.  Chicken is probably the most common though.  When making bone broth, be sure to source out organic, grass-fed bones (your local butcher will have them for cheap!)  Eggs and meat protein are also excellent sources of collagen.

Organika is the brand of collagen I have been using lately but I also recommend Vital Proteins.  Again, make sure the collagen is sourced from grass-fed cows (there are options for vegans too such as algae sourced collagen).  It is tasteless and dissolves in liquids so it can easily be added to recipes.Almond Butter Protein Cups

Ingredients
  1. 1/2 cup coconut oil, melted
  2. 1/2 cup almond butter, softened
  3. 1/3 cup collagen powder
  4. 1/3 cup Nuzest Chocolate Protein Powder
  5. 1/2 tsp pure vanilla extract
  6. 1/4 tsp liquid stevia or sweetener equivalent
  7. Pinch of salt
Chocolate Layer
  1. 1/2 cup cocoa powder
  2. 1/4 cup coconut oil, melted
  3. 1/4 tsp liquid stevia or sweetener equivalent
  4. 1/2 oz slivered almonds
Instructions
  1. Line a muffin tin with paper or silicone liners.
  2. In a mixing bowl, add coconut oil, almond butter, collagen, protein powder, vanilla, stevia and salt. Mix well.
  3. Pour mixture evenly into the 12 muffin liners.
  4. Refrigerate until firm.
  5. Meanwhile, mix together cocoa powder, 1/4 cup melted coconut oil and stevia.
  6. Pour chocolate over almond butter cups.
  7. Sprinkle almonds on top.
  8. Refrigerate until firm.
  9. Enjoy!

  1. Keep leftovers refrigerated as they will melt at room temperature.
