I know it’s not technically fall yet but it doesn’t mean you still can’t get a jump-start on some delicious fall baking.  This Keto Carrot Pecan Cake will win over any carrot cake lover.

Most people who follow keto avoid starchy, high-sugar vegetables like carrots, but you can still enjoy them in recipes like this where it has all the carrot flavour but not enough to spike your blood sugar.

Not only does this cake scream “fall” but it’s also easy to whip up.  The delicious low-sugar, dairy-free glaze gives it that extra pizazz to throw it over the edge.  I even got a thumbs up from the H who normally doesn’t like carrot cake…so that is saying a lot!

Ingredients
  1. 3 eggs
  2. 1/2 cup full fat coconut milk
  3. 1/4 cup coconut oil, melted
  4. 1/3 cup xylitol
  5. 1 cup almond flour
  6. 1 teaspoon baking powder
  7. 1 teaspoon ground cinnamon
  8. 1/4 tsp salt
  9. 1 cup carrots, grated (150g)
  10. 1/2 cup raw pecans, chopped
For the Glaze
  1. 2 Tbsp unsweetened almond milk
  2. 1/2 tsp pure vanilla extract
  3. 1/2 cup powdered xylitol or powdered Swerve
Instructions
  1. Preheat oven to 350F.
  2. Grease an 8 inch baking pan.
  3. Add eggs, coconut milk, coconut oil and xylitol to a medium bowl. Mix well.
  4. Add almond flour, baking powder, cinnamon and salt to a large mixing bowl. Mix well.
  5. Add the wet ingredients to the dry ingredients and beat with a hand mixer until fluffy.
  6. Stir in carrots and pecans.
  7. Pour into baking pan and bake in oven for 30-35 minutes until a toothpick inserted in the middle comes out clean and the edges are golden brown.
  8. Remove from oven and allow to cool.
  9. Whisk together ingredients for the glaze and drizzle on top.
  10. Slice into 16 squares.
  11. Keep leftovers refrigerated.
  12. Enjoy!
