Chocolate Pumpkin Protein Muffins – Low-Carb, Gluten-Free, Dairy-Free

Well it’s time to add another to the list.

Muffins can be tricky to make low-carb, but it is possible.  This recipe has super clean ingredients and my favourite protein powder, Nuzest, so you get 7g of protein per muffin. Not too shabby!

Chocolate Pumpkin Protein Muffins

Chocolate is also pumpkin’s BFF. They go together like PB and jelly.  With only 1/4 cup in 12 servings it’s just enough to know it’s there but not enough to spike your blood sugar.

Chocolate Pumpkin Protein Muffins

Ingredients
  1. 1 cup pure pumpkin puree
  2. 1/3 cup coconut oil, melted
  3. 1/3 cup xylitol
  4. 3 eggs
  5. 1/3 cup unsweetened almond milk
  6. 1 tsp pure vanilla extract
  7. 3/4 cup almond flour
  8. 1/2 cup Nuzest Protein Powder
  9. 1 tsp cinnamon
  10. 1/2 tsp nutmeg
  11. 1 tsp baking soda
  12. 1/4 tsp salt
  13. 1/4 cup dark vegan chocolate chips
Instructions
  1. Preheat oven to 350F. Line a muffin tin with 12 paper liners.
  2. In a medium bowl, mix together pumpkin puree, melted coconut oil, xylitol, eggs, almond milk and vanilla.
  3. In a separate bowl, mix together almond flour, protein powder, cinnamon, nutmeg, baking soda and salt.
  4. Add dry ingredients to the wet ingredients and mix to combine.
  5. Stir in chocolate chips.
  6. Spoon into 12 muffin liners.
  7. Bake for 25-30 minutes until the edges are golden.
  8. Remove from oven and transfer to a cooling rack.
  9. Enjoy!
