Chicken Alfredo Toodles – Paleo, Keto, Gluten-Free

Chicken Alfredo Toodles is an easy low-carb, gluten-free dish with creamy, dairy-free alfredo sauce. The perfect mid-week meal!

I’m sure you’ve heard of zoodles (spiralized zucchini noodles), but have you heard of TOODLES?!

Toodles are turnip noodles. I mean, c’mon if you can call zucchini noodles “zoodles” surely you can call turnip noodles “toodles” And it is so fun to say. TOODLES!

I find myself getting tired of zoodles and cauli-rice so I like to switch things up with different low-carb veggies. And it’s always a bonus when you can spiralize them.

The beauty of this recipe is you can easily sub the turnip with any low-carb veggie if toodles aren’t your thing.  But trust me, once you fry these skinny guys up in a bit of oil with salt and pepper it is truly heaven!Chicken Alfredo ToodlesTo keep things dairy-free, I whipped up an easy, creamy cashew alfredo sauce. This stuff is the bomb and awesome in all kinds of dishes. I recommend making a double batch and freezing half for later.  It tastes amazing drizzled over roasted broccoli and cauliflower.

If you’re vegan you can easily omit the chicken or swap it for tofu…again, this dish is super versatile.

Chicken Alfredo & Toodles
Serves 4

  1. 1 lb chicken breast
  2. 1 medium turnip (500g)
  3. 4 oz raw cashews, soaked
  4. 1 cup water
  5. 2 Tbsp olive oil
  6. 1 medium shallot
  7. 2 cloves fresh garlic, minced
  8. 1 Tbsp fresh lemon Juice
  9. 1 Tbsp nutritional yeast
  10. S&P
  11. Parsley for garnish (optional)
For the Sauce
  1. Soak cashews in water for a few hours or overnight. *This step can be omitted if you have a high-speed blender such as a Vitamix or Blendtec.
  2. In a medium saucepan, add 1 Tbsp olive oil, shallot and garlic. Cook over medium heat for 5 minutes.
  3. Add shallot and garlic, lemon juice, nutritional yeast and raw cashews with 1 cup of water to a blender.
  4. Blend until completely smooth.
  5. Add sauce to a medium saucepan and bring to a simmer. Cook over LOW heat as this can easily burn/stick to the pot. Stir frequently. Add water to thin if necessary.
  6. Season with S&P.
For the Chicken
  1. Preheat grill to medium heat.
  2. Pound chicken breasts with a meat tenderizer (or rolling pin!) until they are about 1/2 inch thin.
  3. Season chicken breasts with S&P.
  4. Grill for 3-4 minutes a side or until cooked thoroughly.
  5. Remove from heat, cover and set aside.
For the Toodles
  1. Spiralize turnip.
  2. Add 1 Tbsp of olive oil to a large frying pan.
  3. Add spiralized turnip (aka toodles) to the frying pan, season with S&P.
  4. Cook over medium heat for 10 minutes turning frequently to ensure they don’t stick.
  5. Toss toodles in alfredo sauce and top with grilled chicken breast. Garnish with fresh parsley.
  6. Enjoy!

    OMG THIS LOOKS SO BOMB!!!! The alfredo aspect reminds me of mac and cheese and now I have a serious jonesing!
