I love weekends in the summer. I try to squeeze in an early run on Saturday or Sunday and then relax in the sunshine for the rest of the day. I’ve never really been an early morning exercise person (I prefer going after work) but the weekends are different. There is something about starting your day with a workout that sets the tone for the day ahead. For me, I find it best to wake up and do my workout fasted, then it’s time to refuel! These strawberry protein pancakes really hit the spot.
Strawberries are in season where we live and are so amazing in pancakes, but they can easily be swapped out for your favourite berry. To add extra strawberry flavour, I used my fave protein powder, Nuzest Clean Lean Protein. It adds strawberry flavour without all the added sugar and junk. These pancakes are also low-carb, low-sugar and gluten-free.

- 3 scoops (50g) strawberry protein powder
- 1 Tbsp coconut flour
- 2 tsp baking powder
- Pinch of salt
- 2 eggs
- 3/4 cup unsweetened almond milk
- 2 Tbsp coconut oil, melted (+ more to grease pan)
- 1 tsp vanilla extract
- 150g strawberries, diced and divided
- Pre-heat large frying pan or griddle over medium heat.
- Grease pan with coconut oil or non-stick spray.
- Add dry ingredients to a bowl, mix well.
- Add wet ingredients: eggs, almond milk, coconut oil, vanilla extract and half the strawberries, to a separate bowl and mix well.
- Add wet ingredients to dry ingredients and mix again.
- Using about 1/4 cup of the batter, pour into pan. Repeat without crowding your pan.
- Cook over medium-low heat for a few minutes until first side is cooked.
- Flip and continue cooking for a few more minutes.
- Continue with remaining batter. Recipe will make 6 medium pancakes.
- Serve with low-sugar maple syrup (optional) and top with more strawberries.
