Brussels Sprout Salad with Maple Vinaigrette

Did you grow up hating these little cabbages?  Did your mom or dad boil the heck out of them leaving them flavourless and mushy? (For the record, my parents never did this, in fact, I don’t even think I started eating brussels sprouts until my adult years!) Even if you had a bad experience in the past, I think I can convert you over to the BS side with this Brussels Sprout Salad recipe. 

If you try it and don’t 100% love it I will return your money…OK…I guess you’d have to buy something first, but this recipe, my friends, is FREE like always.  So you’ll just have to take my word for it that you’ll love it…mmmmk?!

The awesome thing about this recipe is it can be ready in under 15 minutes thanks to my Veggie Bullet.  I am in love with this appliance, I had shredded brussels sprouts, carrots and apples in no time!  Then I added a maple vinaigrette to bring it all together.  Now doesn’t that sound awesome?  I swear you will learn to love baby cabbages after this recipe – it will be my mission.

Brussels Sprout Salad with Maple Vinaigrette

For the Salad
  1. 2 cups (300g) brussels sprouts, trimmed, washed and shredded
  2. 2 carrots (150g), shredded
  3. 1 gala apple (225g), shredded
  4. 1/3 cup (40g) chopped walnuts
For the Dressing
  1. 3 Tbsp olive oil
  2. 1 Tbsp apple cider vinegar
  3. 1 Tbsp maple syrup
  4. 1 tsp dijon mustard
  5. S&P
Instructions
  1. Add all of the ingredients for the salad to a large mixing bowl.
  2. In a small bowl, whisk together the ingredients for the dressing.
  3. Pour over salad and toss to coat.
  4. Enjoy!
