Chocolate Zucchini Bread ~ Gluten-Free, Low-Carb

Sundays are meant for relaxing and baking.  At least I think so! It’s my time to relax and work on recipes for the blog.  There’s something about trying a new recipe that gives me a sense of excitement, anticipation and nervousness hoping it turns out and becomes “blog-worthy”.  This Chocolate Zucchini Bread is one of those recipes.

Even if you don’t love zucchini, I swear you’ll be converted with this recipe.  The melted chocolate throws it over the edge, it just makes everything taste better, am I right?!  And to top it off, it’s gluten-free and low-carb so it makes the perfect mid-day snack.

Ingredients
  1. 2 cups grated zucchini, packed*
  2. 1/2 cup nut butter, softened**
  3. 6 whole eggs
  4. 1/4 cup xylitol or sweetener of choice
  5. 2 Tbsp coconut oil, melted
  6. 1 tsp pure vanilla extract
  7. 3/4 cup coconut flour
  8. 3/4 tsp baking soda
  9. 1 Tbsp ground cinnamon
  10. 1/2 tsp ground nutmeg
  11. 1/8 tsp salt
  12. 1/2 cup dark chocolate (I used 85%), rough chopped
Instructions
  1. Preheat oven to 350F.
  2. Line a 9' x 5' loaf pan with parchment paper.
  3. Grate zucchini and squeeze out as much water as you can.
  4. In a large mixing bowl, add zucchini, nut butter, eggs, sweetener, coconut oil and vanilla. Beat with a hand mixer until smooth.
  5. Add coconut flour, baking soda, cinnamon, nutmeg and salt. Mix again until combined.
  6. Reserve 2 tablespoons of the dark chocolate, stir in remaining.
  7. Pour batter into baking dish and sprinkle the remaining chocolate on top.
  8. Bake for 45-55 minutes until centre is set or toothpick comes out clean.
  9. Allow to fully cool.
  10. Slice into pieces.
  11. Store leftovers in an airtight container.
Notes
  1. *You need 2 cups of zucchini AFTER the water is pressed out. I started with about 4 cups grated and after the water was removed I had 2 cups remaining.
  2. ** I used peanut butter, but for paleo you could use almond butter
