Sometimes I sit and rack my brain for recipe ideas. Sometimes I simply turn to my H and ask him what I should cook up. His response is usually some kind of dessert that’s not too “healthy” or “weird” mostly because he wants to reap the benefits i.e. eat it all 😀
This week he suggested I make peanut butter cookies. But not just any old peanut butter cookie, chocolate peanut butter cookies! Normally they are packed with sugar so for this recipe I used xylitol. I wanted to keep these low in sugar and find that xylitol is the best natural low-sugar substitute for baking, but if you’re not a fan, feel free to sub with stevia, honey, coconut sugar or your sweetener of choice.
With only 5 ingredients, these cookies are so quick and easy to make you’ll wonder why you don’t make these every week – maybe you will 😉 I know my H approved and will most likely be asking for them all the time now!
I created a monster.


- 1 cup all natural peanut butter
- 1/2 cup xylitol or sweetener of choice
- 1 egg
- 1/4 cup dark chocolate chips (I use Enjoy Life)
- 1/2 Tbsp coconut oil
- Preheat oven to 325F. Combine peanut butter, xylitol and egg in a bowl, mix well.
- Line two baking sheets with parchment paper. Roll dough into 24 balls. Place on baking sheets.
- Press down with a fork.
- Bake for 15-18 minutes.
- Remove from oven and allow to cool completely.
- Melt chocolate chips and coconut oil. Drizzle over cookies.
- Keep refrigerated.
