JERF Week 2 Update

Checking in with you guys for week 2 of the JERF Challenge…

Breakfast
My quick go-to breakfast this week again was Dairy-Free Bullet Proof Coffee (see week 1 update for recipe).

Overnight Raspberry Chia Seed Pudding: 1/3 cup full-fat coconut milk, 1/4 cup unsweetened almond milk, 1 1/2 Tbsp chia seeds, 1/2 Tbsp unsweetened coconut flakes, 1/2 tsp pure vanilla extract, few drops of liquid stevia and 50g raspberries.  I blended all the ingredients then poured it into a bowl, covered it and refrigerated overnight. The next morning I had a quick and easy breakfast!Blueberry Spinach Smoothie: Blend 50 g blueberries, couple handfuls of spinach, 1/2 scoop Plant Fusion Vanilla protein powder, 1 cup unsweetened almond milk, 1/3 cup full-fat coconut milk, 1/2 Tbsp natural peanut butter, 1/2 cup water and a few ice cubes.

On the weekends I had my fav breakfast of fried eggs, nitrate-free bacon and avocado.

Lunch/Dinner

I had leftover chicken from last week made into chicken salad lettuce wraps with avocado.On Sunday I cooked up some ground beef again and used it for a few meals.  One of them was taco salad, ground beef cooked in taco spices (cumin, chili powder, garlic powder, onion salt, and S&P) served over salad with salsa and greek yogurt.

We BBQ’q turkey, feta and spinach sausages (so good!) and had them with sweet potatoes and broccoli.

Chicken thighs…BBQ’d again 🙂 with baked spaghetti squash and avocado.

Snacks

This week I made some flaxseed muffins to have before my workouts. I froze half the batch to have next week.  I put melted peanut butter and coconut butter on them – heaven.

I’m also really hooked on Endangered Species 88% Chocolate. They give back 10% of their proceeds to saving endangered wildlife – it’s a win, win!

I usually have one row after dinner so I can make the bar last 5 days 🙂

How I’m Feeling

Another great week. I’m down another 2 lbs pound for a total of just over 4lbs.  I did however break my no-alcohol rule on Saturday and had a few drinks with friends.  It was Winter Carnival and hard to say no!  Plus it was the first time we’ve been out since Christmas, but I’m back on the wagon for the next few weeks 🙂  I haven’t really missed it to be honest.  Everything else has been going good, no insane cravings, thankfully!!
