Buh-Bye Boring Cabbage!

Are you tired of the same old boring boiled cabbage? Maybe you grew up hating it because your Mom boiled it to death.  Luckily, I had parents who are amazing cooks and while we may have had boiled cabbage in the past (I’m not knocking it – it’s awesome with loads of salt and vinegar!), now my Mom makes a really tasty sautéed cabbage slaw.  I can eat this by the bowlful.

Cabbage is packed with fibre which will keep you feeling fuller longer, has cholesterol-lowering abilities and cancer fighting benefits – sounds pretty awesome to me 🙂

This recipe is a great base, but I’ve listed a few flavour variations below that will rock your world.  I promise you won’t be bored with cabbage ever again!Buh-Bye-Boring-Cabbage-www.thehappyhealthfreak.com

Makes 8 servings

1/2 head of medium cabbage, shredded
1 large onion, sliced
1/2 red pepper, sliced
1/2 green pepper, sliced
1/4 cup of olive oil or butter
1 small Thai chili pepper or hot pepper, diced
4 cloves of garlic, minced
S&P to taste

In a large frying pan, add 2 Tbsp of olive oil.  Add the garlic and Thai chili pepper; let it sweat out over medium heat for about 5 minutes.

Add the cabbage, onions and the remaining oil.  Cook for about 10-15 minutes.CabbageAdd the red and green peppers and continue cooking for another 10-15 minutes.  Season with salt & pepper.Fried Cabbage Ingredients

This gives you a good base and is super delish as is, but if you want to try some different flavours, check out these combos:

  • Lemon juice/zest, fresh ginger and sesame oil
  • Orange juice/zest and balsamic vinegar
  • Soy sauce (or tamari or liquid aminos), fresh ginger and honey
  • Italian spices like oregano, rosemary and thyme
  • Add other veggies like carrot, celery or bok choy

    I friggin LOVE cabbage – I never find it boring… However, I do have to love it cooked more than raw! 😉
