Almond Joy Macaroons ~ Low-Carb, Low-Sugar

These are like little pieces of heaven! I absolutely love coconut and any type of macaroon.  These little guys are sweetened stevia which means they are a low-carb, low-sugar treat that will have you wondering how they are so darn tasty!

Makes approximately 40 macaroons

4 egg whites
1/4 cup sugar leaf stevia*
1/2 tsp vanilla extract
1/2 tsp almond extract
4 1/2 cups unsweetened, shredded coconut
40 raw almonds
1/4 cup stevia chocolate chips (I used Krisda)
1/2 Tbsp coconut oil

Preheat oven to 350F.  In a large mixing bowl, beat the egg whites until stiff peaks are formed.  Add sugar and extract, beat again for a few seconds.  Fold in shredded coconut.

Line baking sheet(s) with parchment paper.  Using a tablespoon, measure out macaroons and drop onto baking sheet.  Top each one with an almond.Almond-Joy-MacaroonsBake for 12-15 minutes.  Rotating the sheets once halfway so they brown evenly. These can burn very quickly! Start checking on them after 10 minutes.Almond-Joy-Macaroons2Remove from oven and allow to fully cool.

Melt chocolate and coconut oil either in a bain-marie or microwave.  Drizzle over macaroons.  Place in the fridge until chocolate has hardened.Almond-Joy-Macaroons4

*Sugar Leaf Stevia has 2/3 lower calories and carbohydrates compared to regular sugar.  You can can use any sugar equivalent as long as it is equal to about 2/3 cup of regular sugar.
