Chocolate Chip Cookie Dough Mousse – Low-Carb, Keto, GF, Low Sugar

I know I have been talking more about dairy and adding it into recipes here and there.  It’s definitely a different tune than what I was singing a few years back.  I know that some people cannot tolerate dairy as it can be highly inflammatory causing gas, bloating, and diarrhea.  I still don’t consume a lot of it, but I have been enjoying the benefits of grass-fed organic butter, cream and cheese.

If you do consume dairy it’s always best to get organic, grass-fed or even raw when possible so you are getting the most nutrients and highest quality possible.  Full-fat is always the way to go, ditch the low-fat version of everything!  Low-fat = chemical shit storm!  More and more we’re seeing how awesome healthy fats are for your diet.  Fat will not make you fat!  Still not convinced? Check out this study which states that “high-fat dairy consumption within typical dietary patterns is inversely associated with obesity risk“.  And this study which concludes that low-fat dairy foods can cause obesity, while full-fat dairy lowers the risk of obesity.  Once again, fats are where it’s at!

Onto today’s recipe…

Sometimes you’re just craving raw cookie dough, the kind you used to eat out of the bowl when your mom wasn’t looking.  The kind that made the BEST chocolate chip cookies ever!  Going low-carb/keto and cutting out sugar doesn’t mean you have to skip dessert.  Allow me to introduce you to Chocolate Chip Cookie Dough Mouse…Chocolate-Chip-Cookie-Dough-Mousse-www.thehappyhealthfreak.com

Serves 4

Cookie Dough
1/4 cup almond flour
1 1/2 tbsp organic, grass-fed butter, softened
1/2 tsp pure vanilla extract
1 1/2 Tbsp stevia chocolate chips (21g)
10 drops alcohol-free liquid stevia
Pinch of salt

Mousse
1 cup organic heavy whipping cream
1 tsp pure vanilla extract
10 drops of alcohol-free liquid stevia to taste

Prepare the cookie dough by mixing together all the ingredients and dropping bite sized morsels or little balls onto a baking sheet lined with parchment paper.
