Now that we’ve had a taste of summer in BC (we’ve already had a few days at 30°C!), I always feel the need to go from heartier meals like pastas, soups and stews to BBQs and fresh, light salads. No one wants to slave over a hot stove on a beautiful sunny day. No one.
This salad screams summer! It’s light and fresh but is a fully satisfying meal all on its own. I love the lime ginger dressing and often make it for salads. It goes so well with the salmon and mango. I hope you enjoy it as much as I did…
Serves 2
For the Salad
6 oz fresh salmon
1/2 cup cooked quinoa
4 cups (or more!) mixed greens
3 green onions, chopped
1/2 cup cucumber, diced
1/2 cup mango, diced (about 100g)
1/2 avocado, diced (about 80g)
For the Lime Ginger Dressing
1 Tbsp olive oil
1/2 Tbsp honey
1/2 Tbsp apple cider vinegar
1/2 Tbsp fresh grated ginger
1 Tbsp fresh lime juice

Bake or grill your salmon to preference. I like mine slightly under-cooked so it’s not dry; I cook it for about 6 minutes.
To make the Lime Ginger Dressing, simply add all the ingredients to a mason jar, screw the lid on and shake, shake, shake!Divide the greens up into two bowls and top with cooked quinoa, mango, avocado and salmon. Drizzle dressing on top. Enjoy!
