Blackberry Chia Seed Pudding ~ Vegan2When I’m looking to switch up my keto breakfasts from Bulletproof coffees or eggs, fried avocado and bacon, I whip up a big ‘ol bowl of Chia Seed Pudding. Oh yeah, get in ma belly!

Not only is this pudding full of healthy fabulous fats that will keep you full for hours, it’s low in sugar and packed with fibre.  I make this the night before so it has time to fully thicken; then wake up to a delicious, nutritious breakfast 🙂 You can use any type of berry but I prefer blackberries because it has the least amount of sugar and carbs.

Serves 1

1/2 cup full fat organic coconut milk
1/4 cup unsweetened almond milk
2 Tbsp chia seeds
1/3 scoop vegan protein powder (I used Plant Fusion Chocolate)*
1/2 Tbsp cacao powder
50g blackberries (about 10 whole berries)
Optional toppings: unsweetened coconut or cacao nibs for crunch!

Add all the ingredients, except for the toppings, to a blender and blend on high until combined.

Transfer to a bowl or airtight container.  Cover and refrigerate for at least 1-2 hours but overnight is best.

Wake up, remove from fridge, add your toppings and enjoy!
