Sometimes the most delicious meals are the most simple to prepare. I try to eat real food as much as possible and there is nothing like the crunch of fresh crisp veggies! This rainbow bowl is not only beautiful but so easy to assemble and full of fabulous healthy carbs. It’s perfect for your next Meatless Monday! Are you vegan? No prob, just omit the egg 🙂
50g purple cabbage, shredded (about 3/4 cup)
50g carrot, grated (1 medium carrot)
50g sweet potato, cooked and diced
25-30g avocado, diced (1/4 of a medium avocado)
½ cup egg whites, scrambled*
1/2 cup chickpeas, rinsed and drained
3 Tbsp roasted garlic and sundried tomato hummus**
* I am using egg whites to keep the fat content low for my high-carb, low-fat days. You can easily sub with a hard-boiled egg instead.
** You can sub with any kind of hummus, but this one is my fav!
