Chocolate Chip Oatmeal Cookies ~ Gluten-Free & Dairy-Free

I figured it was time to make my cookie monster (aka: the hubbs) a little treat.  These cookies are so easy to whip up and made with pure, simple ingredients.  They’re gluten-free, dairy-free and sweetened with natural sweeteners.  I know they will be a hit with your cookie monster too!Chocolate Chip Oatmeal Cookies ~ ~ #glutenfree #dairyfree #lowsugar

Makes 15 cookies (Recipe can be doubled)

3/4 cup gluten-free rolled oats
1/2 cup oat flour
1/4 cup flaxseed meal
1/4 cup coconut sugar
1/3 cup unsweetened applesauce
1 egg
1/2 tsp pure vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp baking soda
1/8 tsp sea salt
1/4 cup vegan chocolate chips (I used Enjoy Life)
1/4 cup walnuts or any nut
