I hope you all had a fabulous Valentine’s Day weekend filled with lots of love…and chocolate! If you’re anything like me you may have had a few too many treats…ooops. Luckily it’s a new day and I’m ready to get back on track!
Keeping things keto I decided to whip up a healthy snack to have throughout the week. This granola is oat-free, low in sugar, and packed full of healthy nuts with fabulous fats that will keep you fuller longer. Add it to your yogurt or just eat it by the handful!
Makes 10 servings
1/2 cup slivered almonds
1/2 cup pecans
1/2 cup pepitas
1/4 cup chia seeds
1/4 cup flaxseed meal
1/4 cup cacao nibs
3 Tbsp all-natural peanut butter, softened
3 Tbsp coconut oil, melted
2 Tbsp coconut nectar (could use maple syrup or honey)
1/8 tsp pink or sea salt
Preheat oven to 300F. In a large bowl combine the nuts, seeds and cacao nibs (first 6 ingredients).In a small bowl, mix the melted coconut oil, peanut butter and coconut nectar. Pour over the nuts/seeds, add salt and mix well.
