Cauliflower Garlic Fingers ~ GF, Low-Carb, DF Option

During my 20s I lived on the east coast for 6 years.  I was introduced to many Atlantic Canadian late-night delicacies, such as donairs and garlic fingers.  Both are sooo delish but oh so bad for you.  Garlic fingers are often served alongside pizza and dipped in donair sauce or marinara.  Back in the day I would polish off many greasy slices after a night of drinking, but now that I’ve grown up (sort of!) I’ve decided to try a low-carb, gluten-free version.

You can use whatever type of cheese you prefer.  Daiya works quite well if you want to keep it dairy-free.  Don’t be discouraged by the cauliflower! I was converted when I tried cauliflower pizza crust for the first time.  These are very similar, just a bit more cheesy and a bit more garlicky 🙂Cauliflower Garlic Fingers ~ www.thehappyhealthfreak.com ~ #lowcarb #keto #glutenfree

Makes 12 garlic fingers

1 medium head of cauliflower (about 7-8″)
1 cup of cheese of choice (Parmesan, mozza, cheddar or Daiya)
1 egg
2 Tbsp Italian herbs (thyme, basil, oregano)
1 clove garlic, minced
1/4 tsp pink or sea salt

Preheat  oven to 400F.  Grate the cauliflower using a food processor or box grater.  Add an inch of water to a large sauce pan and bring to a boil.  Add the cauliflower, cover with a lid and steam for about 5 minutes.Cauliflower Garlic FingersStrain cauliflower through a cheese cloth and squeeze out the excess moisture.  It will be hot so make sure you let it cool down first!Cauliflower Garlic Fingers2 Transfer to a medium bowl and add the egg, 1/2 cup of cheese, herbs, garlic and salt.  Mix well.     These look fantastic! I was always a huge fan of garlic bread, or “fingers” as you call them, when I was younger too 🙂
