I used to be a cereal junkie. I pretty much ate it every day because it was quick and easy and, what I thought was, healthy and nutritious. I haven’t had traditional cereals in years and every now and then I get a craving for it. I wanted to whip something up that is low-carb and gluten-free. It’s keto friendly too with 3g of net carbs per serving.
Makes 4 Servings
1/2 cup ground flaxseed
1/4 cup chia seeds
1/4 cup unsweetened shredded coconut
1 Tbsp coconut oil, melted
1 tsp cinnamon
1 tsp pure vanilla extract
1/8 tsp pink or sea salt
10 drops of liquid stevia to taste
Preheat oven to 325F. Add all the ingredients to a medium bowl and mix well. Line a baking sheet with parchment paper. Add the mixture on top and roll between another sheet of parchment paper until it’s about 1/8″ thick. It does not need to be perfect as it will be broken up into pieces.Bake in oven for 20 minutes. Keep eye on it making sure it does not burn. Remove from oven and allow to fully cool.
Break up into small pieces. Serve with your favourite non-dairy milk and enjoy! Nutritional Info per serving
