Brunching. Isn’t it fabulous?! Usually on the weekends, when I have more time in the mornings, I like to make a bigger breakfast. Since adapting to the keto lifestyle you would think that excludes things like french toast, waffles and pancakes. Luckily, there are a world of low-carb flours out there which transform into fabulous, fluffy low-carb pancakes. And of course there’s chocolate involved, because we all know everything is better with chocolate!
These pancakes are also gluten-free and dairy-free. Top them with your favourite toppings or add a big dollop of coconut whipped cream – heavenly!

Chocolate Low-Carb Pancakes

Serves 1
Ingredients
- 1/3 cup almond flour
- 1 egg
- 2 Tbsp of sparkling water* or plain water
- 1/8 tsp sea salt
- 10-12 drops of liquid stevia or sweetener of choice
- 1 Tbsp coconut oil
- 8g unsweetened bakers chocolate
Instructions
- In a microwaveable bowl, add 1/2 Tbsp coconut oil and chocolate. Microwave at 20 second intervals until fully melted.
- In another medium bowl, add almond flour, egg, water, salt, and stevia; mix well.
- Stir in melted chocolate.
- Heat a griddle or frying pan over medium heat.
- Add 1/2 Tbsp of coconut oil. Once melted, spoon the batter into the frying pan. I got four 3.5" pancakes from the batter.
- Heat for a few minutes a side until cooked, flipping once.
- Remove from pan and top with your favourite nut butter, sugar-free maple syrup or coconut whipped cream.
Notes
- *Sparkling water will make the pancakes fluffier.
- To make coconut whipped cream, simply place a can of full fat coconut milk in the fridge for a few hours or overnight. This allows the "cream" to separate from the milk. Remove the can and turn it upside down - do not shake it! Open the can and scoop out the heavy cream. Using a hand mixer, whip this with a bit of vanilla extract and stevia (or sweetener of choice). It is perfect as is, or refrigerate again and allow it to firm up a bit more.
