Happy Meatless Monday everyone! This week I have a fabulous twist on traditional guacamole. Adding some kale and a few other ingredients takes your guac to the next level and you get all the wonderful benefits of kale without having to chomp on the leaves 🙂
Yields 1 3/4 cup
2 cups kale leaves (de-stemmed)
1/4 cup leeks, chopped
1 small shallot, chopped
1-2 cloves of garlic
1/4 cup fresh cilantro, chopped
1/2 small green jalapeno, diced (seeds removed, unless you want it spicy!)
1 large avocado (about 150g)
1 small tomato, diced
2 Tbsp fresh lime juice
S&P
Add kale, leeks, shallot and garlic to a blender or food processor. Blend until smooth. Add cilantro and jalapeno, blend again until combined.
Transfer kale mixture to a medium bowl. Add avocado and mash until creamy.
Add diced tomato, lime juice and S&P. Stir well.
Serve with your favourite chips, crackers or veggies. Enjoy!
