Creamy Coconut Butter

I was on the hunt the other day. I looked everywhere for coconut butter but could not find any!  I then realized how easy (and inexpensive!) it is to make your own with only ONE ingredient – yup, just unsweetened, dried coconut. But why stop there? I decided to add a couple more ingredients and make chocolate coconut butter.  Everything is better with chocolate, am I right?!

Spread this butter on toast, drizzle on fruit, add to smoothies, make fudge or just enjoy it by the spoonful!Creamy Coconut Butter ~

  1. Yields just over 1 1/2 cups or 25 Tablespoons
  2. 5 cups unsweetened, shredded coconut
  3. 2 Tbsp coconut oil, melted (optional)
  4. 2 tsp cacao powder (optional)
  5. 5-10 drops of liquid stevia (optional)
  1. I made this in my Vitamix but you can also make it in a food processor.
  2. Add the coconut to your blender and blend on high for 1-2 minutes using the tamper to push the ingredients down or stop to scrape down the sides as you go. If you are making this in your food processor it will take about 8-10 minutes.
  3. Blend until smooth and creamy. You can stop here and have fabulous coconut butter, or add cacao powder, coconut oil and stevia for a delectable chocolate spread!
  4. Transfer to a jar with a lid and store in your pantry for up to 3 months...if it lasts that long!
  1. Adding coconut oil is completely optional and not totally necessary unless your mixture is not coming together. I added it for the extra healthy fat.
  2. Stevia is also completely optional, depending on whether or not you want it sweet. You can alternatively add honey, maple syrup, agave...the options are endless!!
  3. You can also make vanilla coconut butter by simply adding 1 teaspoon of pure vanilla extract.
  4. Do not store in the fridge, it will get too hard. It will also firm up in your pantry depending on how cold your climate is. It melts quite easily though.
