Happy Friday everyone!!! I wanted to talk about a fabulous healthy fat that I have been incorporating into my diet lately. It’s call MCT oil, which stands for medium chain triglycerides. So what the heck is it and why should you try it? I won’t bore you with the scientific details, but it is out there in the Google-sphere if you want more in-depth info. MCT oil is widely used to aid in fat loss, increase energy and power up brain function. When MCT’s are absorbed into the blood stream, they bypass the digestion process that longer chain fats go through. MCT’s provide quick energy for the body and are thus less likely to be stored in the fat cells.

It is odourless and translucent at room temperature which make it perfect to add to your Bulletproof Coffee, smoothies and even salad dressings. It should not be used as a cooking oil though as it has a low burning temperature which will cause it to oxidize and affect the taste.
When shopping for MCT oils, look for one that is made from palm kernel oil as opposed to palm oil. It is less processed. I have been using New Roots Herbal MCT Energy. Some other brands you could try are:

Try it out in this fruit-free, low-carb smoothie!


- 1 cup unsweetened almond milk
- 1/2 avocado
- 1-2 cups spinach
- 1/2 scoop protein powder, I use Plant Fusion
- 1 tsp cocoa powder
- 1 Tbsp hemp seeds
- 1 Tbsp MCT oil
- 10 drops liquid stevia
- 1/4 - 1/2 cup water for thinning out to desired consistency
- Ice cubes
- 1 tsp cacao nibs (optional)
- Add all the ingredients except cacao nibs to a blender and blend on high until smooth.
- Pour into a glass and sprinkle with cacao nibs.
- Sip and enjoy!

Oh perfect! I have been cutting out all forms of sugar, even fruit. It’s weird not having fruit in my smoothie. But I love the cocoa avo combo in this. ..super yummy!
