I hope my fellow Canadians are having a fabulous Thanksgiving long weekend! I decided to do my Monday post a day early in case anyone needs a last minute, super fast Thanksgiving dessert.
Since adopting a keto lifestyle I have been looking for recipes that are high in fat and low in carbs. Coconut milk is not only rich, creamy and satisfying but it is a fabulous healthy fat. They make amazing puddings. And what better way to keep this “pumpkin everything” train rolling than with this festive pudding!

Vegan Chia Seed Pudding

Serves 4
Ingredients
- 1 400ml can full fat coconut milk
- 1/2 cup 100% pure pumpkin puree
- 1/4 cup chia seeds
- 1 tsp pure vanilla extract
- 1 tsp pumpkin pie spice
- 20 drops of liquid stevia
Instructions
- Add all the ingredients to a mason jar and shake vigorously (alternatively, you could add to a bowl and stir well).
- Refrigerate for at least 4 hours or overnight until thickened.
- Enjoy!
