tumblr_mdeikvU9jd1qiou8so4_250I hope my fellow Canadians are having a fabulous Thanksgiving long weekend! I decided to do my Monday post a day early in case anyone needs a last minute, super fast Thanksgiving dessert.

Since adopting a keto lifestyle I have been looking for recipes that are high in fat and low in carbs.  Coconut milk is not only rich, creamy and satisfying but it is a fabulous healthy fat.  They make amazing puddings.  And what better way to keep this “pumpkin everything” train rolling than with this festive pudding!Vegan Pumpkin Chia Seed Pudding ~ www.thehappyhealthfreak.com #vegan #chiaseed #dairyfree

Vegan Chia Seed Pudding
Serves 4

  1. 1 400ml can full fat coconut milk
  2. 1/2 cup 100% pure pumpkin puree
  3. 1/4 cup chia seeds
  4. 1 tsp pure vanilla extract
  5. 1 tsp pumpkin pie spice
  6. 20 drops of liquid stevia
  1. Add all the ingredients to a mason jar and shake vigorously (alternatively, you could add to a bowl and stir well).
  2. Refrigerate for at least 4 hours or overnight until thickened.
  3. Enjoy!
