What’s in my lunchbox?!

Happy Friday everyone! I figured it was time for a “What’s in my Lunchbox” post since I’ve been neglecting them lately.  So let’s take a look…

Morning Snack: Greek yogurt (I don’t normally buy these flavoured ones, but they were on sale so I thought I’d try them out) and the last of my batch of almond joy granola I made from the Minimalist Baker, it was amazing!! Lunchbox2Lunch: Big Salad with chicken, hempseeds, sunflower seeds and a creamy miso dressing which is super easy to make:

2 Tbsp of Vegenaise (or regular mayo)
1 Tbsp low-sodium soy sauce
1/2 Tbsp white miso paste
1/2 Tbsp raw honey
1 tsp Dijon mustard
Pinch of salt

Whisk together, makes 2 servings.Lunchbox3Afternoon Snack: Two Fat Bombs from Leanne over at Healthful PursuitLunchboxI’ve been trying some keto recipes to see if this is something I want to pursue.  A ketogenic diet is a high fat, moderate protein and low carb diet.  “Ketosis is a state where your body goes from burning glucose as energy to BURNING FAT AS ENERGY. Glucose includes ALL forms of carbohydrates. From sugars, to grains, to starchy vegetables and fruits.”  Basically, you turn into a lean, mean, fat burning machine!  I’ll keep you posted on my progress 🙂
