Helloooo October! Is it just me, or did September fly by?! The good thing is Thanksgiving is right around the corner, then Halloween and THEN Christmas! Yup, I said it. Yup, I get excited for Christmas in August…so sue me. The good thing about the cooler weather is I’m using my oven more which means…baked goodies!
These vegan chickpea blondies are somewhat a combination of these chickpea brownies and these black bean brownies. I added the goji berries last minute and I’m glad I did! I mean, if you’re going to eat a brownie, it might as well have an energy boost 🙂
Makes 9 squares
1 15oz can chickpeas, drained and rinsed
2 flax eggs – 2 1/2 Tbsp of ground flaxseed + 6 Tbsp of water
3 Tbsp of coconut oil or vegan butter
3/4 cup oat flour
3/4 cup coconut sugar
1/4 cup unsweetened shredded coconut
1 1/2 tsp baking powder
1 tsp pure vanilla extract
1/4 tsp Himalayan pink or sea salt
2 Tbsp vegan chocolate chips
1 Tbsp goji berries
Preheat oven to 350F. In a small bowl, mix together the ground flaxseed and water, stir and set aside to thicken.Add all the ingredients except the chocolate chips and goji berries to a blender and blend until smooth and creamy. The batter will be quite thick.
Grease an 8 x 8 inch baking dish. Pour batter into the dish. Top with chocolate chips and goji berries. Bake for 25 minutes.
Let cool and cut into squares.
