Vegan Chickpea Coconut Blondies

Helloooo October!  Is it just me, or did September fly by?! The good thing is Thanksgiving is right around the corner, then Halloween and THEN Christmas! Yup, I said it. Yup, I get excited for Christmas in August…so sue me.  The good thing about the cooler weather is I’m using my oven more which means…baked goodies!

These vegan chickpea blondies are somewhat a combination of these chickpea brownies and these black bean brownies.  I added the goji berries last minute and I’m glad I did!  I mean, if you’re going to eat a brownie, it might as well have an energy boost 🙂Vegan Chickpea Coconut Blondies ~

Makes 9 squares

1 15oz can chickpeas, drained and rinsed
2 flax eggs – 2 1/2 Tbsp of ground flaxseed + 6 Tbsp of water
3 Tbsp of coconut oil or vegan butter
3/4 cup oat flour
3/4 cup coconut sugar
1/4 cup unsweetened shredded coconut
1 1/2 tsp baking powder
1 tsp pure vanilla extract
1/4 tsp Himalayan pink or sea salt
2 Tbsp vegan chocolate chips
1 Tbsp goji berries

Preheat oven to 350F.  In a small bowl, mix together the ground flaxseed and water, stir and set aside to thicken.Chickpea BlondiesAdd all the ingredients except the chocolate chips and goji berries to a blender and blend until smooth and creamy.  The batter will be quite thick.
