Veggie Taco Bites ~ Meatless Monday

Happy Meatless Monday!  I’ve walked by these little wontons in the grocery store many times but had never cooked with them . Well, today is the day!  I was surprised with how easy and versatile these little wraps are.  They are fabulous for making these delicious veggie taco bites.

This is the perfect veggie dinner, it is very low in fat and high in protein – yes, you can still get your protein without the meat!  My carnivore husband even gave it a thumbs up!  He asked what kind of meat I used and was surprised when I told him it was meatless.  You just never know who you may convert 🙂Veggie Taco Bites ~

  1. 24 wonton wrappers
  2. 2 packages of Yves veggie ground round
  3. 1 package of low-sodium taco seasoning - or make you own!
  4. 1/4 cup water
  5. 1 bell pepper, diced
  6. 2-3 green onions, diced
  7. 1 small tomato, diced
  8. 1/2 cup grated cheese, I used Daiya mozzarella shreds
Optional toppings
  1. Salsa
  2. Sour Cream
  3. Olives
  1. Preheat oven to 350F. In a large frying pan, add veggie ground round, taco seasoning, water and bell pepper.
  2. Cook for about 7 minutes.
  3. Spray muffin tin with non-stick spray. Line each tin with 2 wonton wrappers overlapping each other.
  4. Fill with taco mix and top with cheese.
  5. Bake for about 10-12 minutes or until cheese is melted and corners of the wontons start to brown.
  6. Remove from oven, add green onions, tomatoes and any other toppings.
  7. Let cool and enjoy!
