Apple Pumpkin Spice Muffins ~ GF, DF

I sometimes feel bad for apple.  Pumpkin gets all the attention when fall rolls around that we forget about this sweet delicious fruit! I’ve decided to let it share the spotlight with pumpkin in this perfect fall flavoured muffin.   They are easy to whip up and also gluten-free and dairy free.Apple Pumpkin Spice Muffins ~ GF, DF ~ www.thehappyhealthfreak.com

Makes 18 Muffins

2 1/2 cups gluten-free flour blend
2 tsp pumpkin pie spice
1/8 tsp sea salt
1 cup coconut sugar
1/2 cup Earth Balance butter
3 whole eggs
1 cup 100% pure pumpkin puree
1/2 cup unsweetened apple sauce
1 tsp pure vanilla extract
1 cup apples, diced
1.5 oz crushed walnuts

Preheat oven to 350F.  Line 2 muffin tins with 18 paper liners.  In a large bowl add flour, pumpkin spice and salt, mix well.
