Maca Mocha Mint Nice Cream

Wow! Is it September already!? As summer draws to an end (*gasp!* I said it!) there just aren’t enough days left to sit on your deck basking in the glorious sunshine and chowing down on ice cream – who am I kidding, I eat this stuff year round!

Serves 2

2 frozen bananas
1/3 cup almond milk
2 Tbsp cocoa powder
1/2 Tbsp maca powder
5-10 leaves of fresh mint (or a few drops of mint extract)
1 Tbsp cacao nibs or chocolate chips
A few drops of liquid stevia to taste (optional)

Add all the ingredients to a high-speed blender or food processor and blend on high until ice cream consistency is formed

    This looks delicious! I’m addicted to peanut butter banana that I never experiment with new flavours but I love this idea! Do you find that it tastes like true chocolate mint ice cream? Or can you still taste the bananas?

      Thamks! I find of you use a good quality cocoa and with the mint it does have a great flavour and is less banana-y 😉

      Well the bananas are frozen so it is about the consistency of soft serve when it’s blended. I usually throw it in the freezer for a half hour or so to firm it up more. Makes for a tasty, healthy treat!
