Yes, you read that right, zucchini in a smoothie!!  Don’t be scared! Zucchini blends well; you will never know it’s there. Plus you get all the awesome benefits of zucchini, it’s very low-cal, has zero saturated fats and cholesterol, high in manganese, antioxidants and fibre which is great for your digestive tract and can help with constipation and overall digestive health.

Serves 1

1 small zucchini or half a large one, peeled if not organic
1 cup blueberries
1/2 banana
1 handful of spinach
1 cup coconut water
1/2 cup water
1/2 Tbsp chia seeds
5-8 drops of liquid stevia or 1-2 dates
