Making your own non-dairy milks at home are incredibly easy! I’ve previously showed you how to make almond milk and now I’m going to show you how to make your own coconut milk. Hopefully you were able to check out my previous post on picking out and cracking a fresh coconut. Once you have removed the meat you can make a number of things including coconut butter, cream or milk.
Yields 4 cups
Meat from one mature coconut (or 2 1/2 cups unsweetened shredded coconut)
4 cups filtered water, room temperature
1 tsp vanilla
8-10 drops liquid stevia or sweetener of your choice
Add all ingredients to a high-speed blender and blend on high for about 2 minutes. Place a nut milk bag or cheese cloth over a bowl and pour the milk into it. Using your hands, twist the bag to remove all the liquid. You will be left with the pulp which can be reused in smoothies or baking, although it is pretty bland.Transfer milk to a jug or large mason jar and refrigerate for up to 5 days.
Because there are not stabilizers, the milk will separate in the fridge. That’s totally normal! Just give it a good shake.
