Tangy French Green Beans ~ Meatless Monday Side Dish

I picked up these fabulous green beans from the market last week and whipped up this tangy side dish.  Try it out for your next Meatless Monday meal!Tangy French Green BeansPrint Recipe

Serves 4-6

A few handfuls of green beans – about 500g
1/4 cup red onions, diced
1 clove of garlic, minced
3 Tbsp olive oil
1 Tbsp apple cider vinegar
3 tsp Dijon mustard
1/2 Tbsp nutritional yeast
1 Tbsp of capers (optional)
S&P to taste

Wash and trim the beans.Green Beans4Add diced onions and garlic to the beans.  Steam for about 5 minutes.Green Beans3Meanwhile, whisk the olive oil, vinegar, mustard, nutritional yeast and S&P.Green Beans2Once the beans are cooked add the dressing and capers and mix well.Green Beans1Serve right away!
