Broccoli Slaw Salad ~ Vegan

It’s Monday! You know what that means?! Time for another super fabulous meatless recipe.

After watching some old SNL I was inspired to do a broccoli post.  So start choppin’ broccoli and let’s whip up this easy vegan salad.Vegan Broccoli Slaw SaladPrint Recipe

Serves 4

2 small heads of broccoli
3 cups of coleslaw mix
1/4 cup Goji berries (could also use raisins or dried cranberries)
1/4 cup slivered almonds

For the Dressing
1/4 cup tahini (see notes)
2 Tbsp Vegenaise (or mayo if not vegan)
2 Tbsp apple cider vinegar
2 Tbsp water
1 tsp dijon mustard
1/2 Tbsp maple syrup or agave
1 clove of garlic, minced
1 Tbsp nutritional yeast
1/2 tsp paprika
1/4 tsp turmeric
S&P to taste

Notes: Tahini is paste made from ground hulled sesame seeds. You can find it in most health food and grocery stores. Or you can easily make your own by roasting some raw, unsalted sesame seeds. Blend on high until smooth. You may want to add a bit of olive oil if it’s too dry.

Wash the broccoli and cut into bite sized pieces. Broccoli Slaw Salad3 You can use the broccoli raw, but I prefer to quickly steam them for a few minutes to soften them.  Once they have steamed, immediately remove from heat, strain and transfer to a bowl of ice water to stop the cooking process – you don’t want them to get mushy!

To make the dressing, combine all the ingredients in a blender and blend on high until smooth and creamy.  You may need to add a bit of water to reach desired consistency.Broccoli Slaw Salad2Add broccoli, coleslaw mix, goji berries and almonds to a large salad bowl.  Broccoli Slaw Salad3Pour dressing over top and mix well to combine.  Refrigerate for at least a couple of hours so the flavours can marry.  Broccoli Slaw Salad4Enjoy!
