What’s for Breakfast?! Strawberry Overnight Oats

Yes, the strawberry madness continues!!  Did you check out the shortcakes from the other day?! I seriously can’t get enough of these berries right now.  I could eat them at every meal, especially breakfast.

I love me some overnight oats as you can tell here, here and here, and these strawberry oats do not disappoint.  Try them out for a healthy, berry-filled breaky!Strawberry Overnight OatsPrint Recipe

Serves 1

1/2 -3/4 cup fresh strawberries, hulled and washed
1 cup unsweetened almond milk
1 Tbsp chia seeds
1/3 cup dry gluten-free oats (I use Bob’s Red Mill)
1/2 tsp pure vanilla extract
Few drops of liquid stevia to taste (optional)

Optional Toppings
1 Tbsp cacao nibs
Sprinkle of unsweetened coconut shreds
More fresh strawberries

First, blend your berries and milk – this is also a healthy version of strawberry milk, yum! strawberry oats Add this to a bowl with the oats, chia seeds, vanilla and stevia if using. Stir to combine.strawberry oats2 strawberry oats3 Cover and refrigerate overnight.  You’ll see it thickens up quite nice.strawberry oats4I like to take mine out about 15 minutes before eating to get the chill off.  Add your toppings and enjoy! Berry easy breaky.strawberry oats6Nutritional info (without toppings)
