My very first gluten-free bread making experience!

I finally made bread! YAY! Well, I don’t know if I should be so excited. I’m not exactly 100% happy with how it turned out.  Allow me to explain…

A couple of years ago I cut out most gluten because I didn’t like how it made me feel so bloated and since most grains are now genetically modified I have steered clear of them besides sprouted grains.  I rarely even eat bread, but I do like the occasional piece of toast on the weekend with my egg white omelette.  Since GF bread is SOOO expensive, I decided to try to make my own!

I trolled the Internet looking for recipes.  I decided on a combo of two recipes, this one and this one, maybe that was my first mistake.  I made the dough using the dry container of my Vitamix.  You can grind your own flour and knead your own dough.  It actually worked out quite well!bread2 bread3My second issue was I didn’t have a proper loaf pan.  I think I should have something like this…

OK, back to my bread.  I covered the dough with a towel and let it sit for about an hour. bread4 bread5The dough rose, and I popped it in the oven.  Well it continued to rise, so much so it spilled over onto the bottom of by oven – so that’s what that burning smell is?!  I quickly fixed that and continued to cook the bread.  It came out looking not so pretty but smelling fine!bread6 bread7 I let it cool and sliced it up.  It did not turn out as fluffy as I would have liked it.  It wasn’t dense either, it was kind of gummy – I think I added too much water 🙁

I still had to taste it, so I popped a couple of pieces in the toaster and slathered it in peanut butter.  It actually tasted pretty good!  It would not make good sandwich bread but for this gal who loves her toast and PB it was A-OK!Gluten Free Homemade BreadSo there you have it, that was my very first time making GF bread.  I will definitely be trying it again, but maybe a different recipe or maybe I should just invest in a bread maker!

    From the looks of it, your bread deflated while in the oven? I make this assumption based on a couple of the photos, they look as if a “well” has formed down the center of the pan. There are many reasons this can occur. Too much liquid, over proofing (allowing it to rise for too long) …even oven temperature can play a part in it. Since you mentioned that it tasted gummy, my best guess is too much liquid. Hey, it happens! 🙂
    Maybe decide on one recipe for your next attempt (instead of a combination of two) and see if that helps. Bread can be very tricky sometimes. Good luck! 🙂

      Thank you, thank you!! I totally need the advice 🙂 I think it was too much liquid as well. Next time I will definitely stick to one recipe!!

        Good luck, let us know how it goes! Like I said, bread can be tricky. I’ve made so many different types over the years and have also had my fair share of issues, lol.

            I have yet to get around to posting my recipes for French and Italian bread…I’ll have to get on that soon! Right now for breads I have homemade pretzels, bagels and some super easy drop biscuits. 🙂

    Well the 2nd link in the vitamin is Gluten bread, so maybe the GF product didn’t sub as well.
